Slow Cooker Honey Pineapple Chicken


Here's a great (and FAST) slow cooker recipe for all you busy people out there! I was a bit skeptical of this...I figured the chicken would be dry and tough, but it wasn't! And the honey and pineapple (among other things) had a great flavor to it. This only needs 3-4 hours on low in the sow cooker, so you can thrown it together pretty late in the day. I actually put mine together at around 2:30, set it for 3 1/2 hours, and we were eating just after 6pm. Heath really liked this...Jesse, not so much. He's not a big fan of chicken though, so I kind of expected that. It's not necessary to brown the chicken in the oil before hand, but if it's important to you, by all means go ahead. I won't be bothering with it next time. All it did was dirty a pan and a spatula for no great reason. Overall, this is a definite keeper. I don't have many slow cooker chicken recipes (in fact, this may be my only one), so it's a nice addition to my favorites folder. Hope you all have a great weekend!

'Slow Cooker Honey Pineapple Chicken'

3 pounds boneless skinless chicken breast halves
2 tablespoons canola oil
1 can (8 ounces) unsweetened crushed pineapple, undrained
1 cup packed brown sugar
1/2 cup honey
1/3 cup lemon juice
1/4 cup butter, melted
2 tablespoons prepared mustard
2 teaspoons soy sauce

**In a large skillet, brown chicken in oil in batches on both sides** (optional); transfer to a 5-qt. slow cooker. Combine the remaining ingredients; pour over chicken. Cover and cook on low for 3-4 hours or until a meat thermometer reads 170°. Serve crushed pineapple over the chicken.
