Raspberry Coconut Smoothie


This was a strange recipe for us. I hated it, Jesse tolerated it, and Heath loved it...which is really strange considering he despises coconut.

I actually really like coconut, but this just didn't work for me. I'm blaming the coconut milk, since this was the first time I've ever tried the stuff. I think if I were to make this again I'd use regular milk, maybe some flaked coconut to get the coconut taste, and maybe some vanilla ice cream (if you've got it, then why not?)

I almost didn't post this, but Heath said I should. He said that just because I didn't like it doesn't mean that everyone else is gonna hate it too...allrighty then.

So here ya go! Can't say I really recommend this one, but for those of you who are fans of coconut milk, you'll probably really enjoy it. Play around with it...you may find a different yet similar combination that you like better!

'Raspberry Coconut Smoothie'

Ingredients

1 can coconut milk (15 oz)
1/2 cup frozen raspberries or 3/4 cup fresh raspberries.
2 tablespoons water (optional)
1/4-1/2 teaspoon cinnamon
2 tablespoons honey

Directions

Place all ingredients in a blender and blend until smooth.
