Slow Cooker Apple Chicken


Good morning! Nothing new and exciting going on over here. Other than I'm ready to take everything in this house with Christmas lights on it, throw it out the back door and set it on fire. Christmas hates me this year...seriously.

Last week the whole top portion of our pre-lit tree went out. Heath spent 3 HOURS trying to change out various bulbs and playing with the damn thing (which is difficult to do when the tree is completely decorated). He finally said screw it (though not in those exact, polite words), and strung a separate set of lights around the top.

A few days later, after Heath left for Newport, the entire bottom row went out. I do not have the patience to play the 'which light went out' game, so I strung another strand of lights around the bottom.

Yesterday, the house decided to really piss me off. Another row on the main tree went out, the whole middle section of Heath and Jesse's smaller tree went out, and the lighted garland that runs up the banister went out. But the banister didn't just go out...every single bulb had burnt out. I don't know if there was a surge on that plug, but all the bulbs on the garland were black.

So, to Job Lot I went, in search of more garland. Christmas can kiss my ass this year, cause I am DONE. Anymore lights go out, they're on their own. Needless to say this is the last year of out main tree. We've only had it for maybe 3 or 4 Christmas's, so I'm annoyed that it hasn't held up better. Heath is happy cause now that Jesse's here to back him up, they've both ganged up on me and decided that our new tree next year will have colored lights...bleck.

Anyway, here's a super easy slow cooker recipe for you guys. It's slow cooker time of year here in CT, so you're gonna start seeing a whole lot more of these types of recipes :)

'Slow Cooker Apple Chicken'

Ingredients

3/4 lb boneless skinless chicken breast
1/4 teaspoon dried thyme
dash of pepper
1/4 teaspoon salt
2 tablespoons brown sugar
1 tablespoon melted butter
1 small onion, sliced thin
1/4 cup chicken broth
2 tablespoons apple juice
1 green apple, sliced
1/4 chopped pecans (optional)
1 bag cheddar broccoli rice

Directions

1. Sprinkle chicken with thyme, pepper and salt. Place onions in the bottom of a greased slow cooker; top with chicken.

In a small bowl combine brown sugar, butter, chicken broth and apple juice; mix well. Pour over top the chicken and onions.

3. Cover and cook on LOW for 5 hours.

4. Remove lid and stir in the sliced apples. Cover and continue to cook for 1 hour.

5. Prepare rice according to package directions. Serve chicken and apples over-top the rice and sprinkle with pecans (if desired).
