Mexican Casserole

'Mexican Casserole'

1 1/2 cups crushed tortilla chips
1/2 lb ground beef
1 1/2 cups salsa
1 can chili with beans
8 oz sour cream
3/4 cup canned diced tomatoes, drained
black olives
1/2 cup shredded cheddar cheese


1. Heat oven to 350.

2. Spread crushed tortilla chips along the bottom of a greased 8 x 8 baking dish.

3. Brown the ground beef in a medium skillet; drain. Mix in the salsa and chili with beans. Spread over the tortilla chips.

4. Spread sour cream over the meat and top with diced tomatoes, black olives and shredded cheese.

5. Bake uncovered for 30 minutes, or until bubbly.

  2. We make something similar down here in Texas as a dip (same way you're husband ate it, lol). The main difference is that we add taco seasoning to the sour cream, which makes it super yummy. My husband also likes it with guacamole, too. But u don't add any because I'm not a fan. Loving your site!
