Tomato Bacon Swiss Grilled Cheese


Posting this is painful. P.A.I.N.F.U.L.

I'm on a liquid diet today...haven't been able to eat anything since 6pm last night due to a procedure I have tomorrow morning (nothing serious, just more Crohn's related fun).

I'm STARVING, and it's only noon. I think I'm gonna go to bed around 5 tonight.

While Heath and Jesse eat Stove Top Stuffing Meatloaf for dinner tonight, I'll be on the couch with my steaming cup of...broth. 

Yum.

Maybe if I close my eyes and think reeeeal hard, I can make it taste like meatloaf. Maybe.

Ok guys, have a great day, and enjoy whatever it is you're eating! I'm gonna go take a nap and try not to dream of cheeseburgers and mac n' cheese.

***By the way, I swear there's bacon in that sandwich, it just got gobbled up by all the cheese. Mmmmm....cheese. Ok, I got to get off here****

'Tomato Bacon Swiss Grilled Cheese'

Ingredients

2 slices of hearty bread
2 slices cheddar cheese
1-2 slices Swiss
2-4 slices cooked bacon
2 slices tomato
1 tablespoon butter

Directions

1. Heat a greased skillet on medium heat. Spread butter on one side of each slice of bread. 

2. Place one slice butter side down in the heated skillet. Top with both slices of cheddar, bacon slices, swiss cheese then the tomato. Top with remaining slice of bread, butter side up.

3. Allow 2-3 minutes for the bread to brown, then flip sandwich over and cook for another 2-3 minutes, or until bread is toasted. Serve.

  1. Oh, my sympathies. I hope you get to feeling better real soon. I tried your tomato pie recipe over the weekend and OMG! It was so good! Wouldn't change a thing. :)
