Oven Roasted Chicken & Potatoes

'Oven Roasted Chicken & Potatoes'

3/4 lb diced chicken
1/2 cup chicken broth
1 1/2 teaspoons dried thyme
1 tablespoon olive oil
1/4 teaspoon salt
1/8 teaspoon pepper
3/4 lb red potatoes, cubed
1 medium onion, quartered


1. Heat oven to 350.

2. Combine all ingredients in a greased baking dish. Cover

3. Bake for 30 minutes. Remove cover and bake an additional 30 minutes. Serve.

  1. I'll be looking forward to your posts. I don't have Crohn's but I could eat healthier. And now hubby is working 2nd shift I can try things that he may not like. My older sister and I have had intestinal issues in the past few years so I'll be passing the recipes on to her as well. Keep up the great blog!
