Garlic Rosemary Pork Tenderloin



'Garlic Rosemary Pork Tenderloin'

Ingredients

1 pork tenderloin
4 garlic cloves, sliced
1/4 cup soy  (or coconut aminos)
2 tablespoon dijon mustard
4 tablespoon honey
2 tablespoon orange juice
1 tablespoon finely chopped fresh rosemary
pepper, to taste
3 tablespoon olive oil

Directions

1. Heat oven to 350.

2. Rinse and pat dry the tenderloin. Place meat in a greased baking dish and, using a paring knife, slice small slits along the top and side of the tenderloin, about an inch deep. Place a garlic slice into each hole.

3. Prepare the marinade...in a medium bowl, whisk together the soy sauce, mustard, honey, orange juice, rosemary and pepper. Slowly drizzle in the oil while continuing to whisk. Pour marinade over the tenderloin.

4. Bake, uncovered, for 45 minutes, basting once halfway through. Removed from the oven and let the pork rest for 10 minutes before cutting. Serve with the sauce from the baking dish.
