Well, I did it! I put my boy on the bus this morning without crying! Yay me!!
He loves school. Absolutely l-o-v-e-s it! I'm so glad. Of course, I realize this will probably change once he hits 2nd or 3rd grade, but for now, I couldn't be happier :)
Ok guys, I have a ton of photos to edit and posts to write up. I usually do that on the weekends...edit everything and get all my posts ready for the following week so that all I have to do each morning is type up this little chatty part, but we were out much of last weekend. We took Jesse to Gillette Castle and did a ton of hiking around the property (turns out Jesse loves to hike through the woods...how nice), then Saturday we went back up there for the Essex Steam Train & Riverboat ride. A great weekend, but not very productive on the blog front.
This was a great recipe BTW. Super simple. I saw it on Pinterest (of course) and couldn't pass it up. It was just too easy. And don't worry, it doesn't taste 'vinegary' at all. It's got a really great flavor, and the potatoes were perfect. I love potatoes from the slow cooker...all soft and juicy...Mmmmmm.

'Slow Cooker Balsamic Pot Roast'

3 lb beef chuck roast
2 cups beef broth
1/2 cup sugar
1/4 cup balsamic vinegar
1 tablespoon of soy sauce
1 teaspoon salt
1/4 teaspoon red pepper flakes
3 cloves of garlic, pressed
Zest of 1/2 an orange
6-8 baby red potatoes, washed
1. Place the meat and potatoes into a greased slow cooker.
2. In a medium bowl, Whisk together the remaining ingredients and pour over the top of the meat.
3. Cook on low for 6-8 hours. Remove meat to a large bowl and slice. Serve with potatoes.
