Ok so, these burritos? SO easy! I usually buy the little individually wrapped bean burritos at the store...you know the ones, the frozen ones you heat up for about a minute. Never occurred to me to just make my own! Took about 10-15 minutes, and I'm sure they're much better for you than the store-bought ones. Cheaper too. I got 10 burritos from 1 can of refried beans and 1/4 cup of salsa.
I ate one burrito right away for dinner, then froze the rest. I think there's 4 left. Heath likes them on the weekends for lunch. Jesse doesn't care for burritos of any kind, so he won't eat them, but I imagine most kids would.
To reheat them, I just follow the same directions I follow for the store-bought burritos...take one out of the freezer, wrap it loosely in a paper towel and microwave for 1-2 minutes (mine usually take about 1 minutes 10 seconds). Slather a pound of sour cream over-top and enjoy :)
Ok, I'm gonna hop in the shower then head over to the gym (yes, I shower before I go to the gym, then again after...I have to. I can't leave my house without showering, no matter where I'm going. It's a small part of my crazy). Have a great weekend and I'll see ya Monday!
'Bean and Cheese Burritos'

1 package of flour tortillas (10 pack)
1 can of refried beans (16 oz)
1/4 cup salsa
shredded cheddar cheese (6-8 oz)
sour cream (if desired)
1. Mix the refried beans and salsa together in a medium bowl . (You can also add chopped chicken or ground beef if you like).
2. Drop a large dollop of the bean mixture in the center of each tortilla. Sprinkle with a little shredded cheddar and top with some sour cream (if eating right away), and roll up.
Do not include sour cream in each burrito if you're freezing these. Wrap each individual burrito in saran wrap, then place them all in a large zip-lock bag. Seal and freeze...good for two months.
Remove burrito from the freezer and wrap loosely in a paper towel. Microwave on high for 1-2 minutes. Top with sour cream if desired.
